This dish has an alkalising effect on the blood and is very low carb. Add chilli to boost metabolism.
15 gm organic unsalted butter Serves four 1 large onion, peeled and chopped 225 gm fresh peas, shelled 500 ml vegetable stock ½ Iceberg lettuce, roughed chopped 2 tablespoons fresh mint, chopped Sea salt and cracked black pepper ¼ cup natural yoghurt Mint to garnish
Melt butter in a large heavy bottom saucepan and saute onion.
Add peas and 400 ml stock and bring to the boil. Reduce heat.
Add lettuce and mint and simmer gently for 5 minutes.
Transfer to a blender and puree until smooth.
Return to saucepan and add remaining stock to thin as required.
Serve hot or chilled with a drizzle of yoghurt and fresh mint.
